Barista to District Manager: Meet Katie Boyd!

We’re proud to introduce our newest district manager, Katie Boyd, to Parkhurst Dining. Having more than 12 years of experience with the company, Katie brings an incredible depth of knowledge to this role in service to the Parkhurst higher education accounts across the Midwest region.

“I literally started my career working in a snack bar, and now I’m a district manager,” says Katie. “Some days I pinch myself!”

Before Parkhurst became the food service provider at Mercyhurst University in 2009, Katie had been working at their coffee shop for nearly a decade. Immediately, Katie’s leaders at Parkhurst recognized her talent and potential to grow. Soon, she was promoted from barista to supervisor, then supervisor to director of dining, followed by a promotion to catering director and then to director of board operations, and finally to general manager where she oversaw the entire food service operation for the university.

“Parkhurst has invested in me and my career, and I’m excited to carry on this tradition by investing and growing my team members’ careers as a district manager,” says Katie.

Based on her experience, Katie offers this advice to aspiring leaders looking to advance in their field.

“Don’t lose sight of what you want to do. There will be roadblocks and setbacks, but don’t let those define you. Find the confidence to keep going, believe in the truths about yourself, and recognize the resources you have in the people you have around you. There are boundless opportunities to learn and grow here.”

In her free time, Katie enjoys spending time with her three kids—particularly if that time is spent at the beach or any other locale that features a body of water and sand. And, of course, Katie enjoys creating and sharing delicious meals with her family.

Her favorite food to make is her grandpa’s favorite pie—Graham Cracker Pie with Meringue. Check out her handwritten recipe below:
